VEGETARIAN SEAT-OF-YOUR PANTS STIR FRYE

I'm usually a big meat eater, but a few nights ago, I decided to use up a bunch of lovely veggies going to waste in my frig. I used snap peas, onions, green (zucchini) and yellow squash. You can substitute any veggies you fancy (or have at hand). Ingredients:
1/2 green squash (zucchini)
1/2 yellow squash
Several slices of white onion
Half a bag of snap peas
Several tablespoons of good olive oil
Cumin
Coriander
Dry sherry
S & P to taste

Directions
I used a wok, but you don't really need any fancy pan, just one with a tight lid and room to stir in.
Slice all squash into 1/4 inch rounds
Chop onion slices into moderate size pieces
Several handfuls of snap peas

Heat good olive oil in pan, sprinkle generous amounts of garlic powder in the heating oil and stir well. Then turn chopped veggies into hot oil and begin stirring continuously. Sprinkle cumin and coriander across the veggies to taste. These are strong, aromatic spices that I especially like, so I was fairly generous. Then add S & P to taste.
Continue stir frying until the veggies begin to soften and brown. Add a splash of dry sherry and quickly close lid to let it steam for a moment or two.

Uncover and taste to see all is cooked enough. Put on a small dinner plate and enjoy with a glass of dry white wine. This will serve one, but if you want to cook for more, just double, etc., the amounts and cook until they are fork tender.
