COOL ORANGE AND COCONUT DELIGHT

Ingredients:
Half dozen large oranges
1/4 to 1/2 cup of sugar (to taste)
2 cups flake coconut
1/4 cup fresh squeezed orange juice

Directions
Peel oranges and clean away pith. Then section the pieces and remove seeds. Layer orange sections with light coating of sugar and generous coconut flakes. Repeat layering until all oranges are used up, making certain you have coconut on top. Drizzle orange juice over layers. Then cover tightly with plastic and chill well before serving.
How much sugar or coconut you use depends on your individual taste, so adjust accordingly. I'm not much of a sweet-tooth gal, so I use as little as I can and still not have the oranges too tart.
A refreshing summertime desert, quick, easy and healthful! Great for picnics if you have a cooler.
