LEMON ASPARAGUS MUSHROOM STIRFRY

Ingredients:
1 lb fresh asparagus
4-6 large mushrooms
1 tbls butter
1 tbls olive oil
fresh lemon thyme
zest of one medium lemon
squeeze of lemon juice
S & P to taste

Directions
Trim asparagus and cut into 1-2 inch pieces. Wash and slice mushrooms, making certain they are dry. Stem several sprigs of lemon thyme and chop tiny leaves until they give off a lemony scent.
Zest and juice a fresh lemon.
Melt butter and add a good grade of olive oil to skillet. When it gets hot, add asparagus and stirfry until just starting to soften; add mushrooms and continue to cook until mushrooms start to brown. Add chopped lemon thyme, lemon zest, juice, salt and pepper.
Remove from fire and enjoy with any main dish.
