SHIRL'S SUPER SIMPLE GOURMET GREEN BEANS

3 pounds of fresh green beans
3 slices of bacon
Red balsamic vinegar
White truffle oil
Salted water to cook beans

Wash and trim ends from green beans. Leave in colander. Dice bacon slices in narrow strips. Fry in skillet, stirring until the bacon is crisp. Drain on paper towel. Place beans in a pot of salted boiling water and cook until just fork tender, 3-4 minutes. Do not overcook until limp! Drain in colander, then replace in empty pot.

Sprinkle beans generously with balsamic vinegar and white truffle oil. Toss gently until well coated. Then add bacon and toss again, being careful to spread bacon pieces evenly through the beans. Turn into heated serving dish and enjoy! I use a large Corning Ware bowl with a glass lid to keep the beans warm while they are served.
